The new
Sabiá Fatto in Italia 2025/2026 has just arrived in Brazil, marking the second special edition of the Brazilian brand produced in Italy. This release introduces a blend made from
Pisciottana, an Italian variety not grown in Brazil and harvested from monumental olive trees aged around
500 years, combined with
Frantoio, a native cultivar from the Campania region.
The batch was crafted under the technical supervision of experts
Nicolangelo Marsicani,
Michele Siniscalchi and
Emanuel De Costa. To preserve the oil’s freshness and sensory integrity, Sabiá opted for
air transport from Italy to Brazil. This decision significantly shortens the time between extraction and market availability.
A project born from a passion for olive growing
Marsicani explains that the 2025/2026 Sabiá Fatto in Italia blend was conceived by brand founders
Bob Costa and
Bia Pereira. During a visit to Italy in June, they were struck by the monumental olive trees, towering with impressive trunks. When they learned that those trees were around
500 years old, they decided their next oil should come from such secular groves.
They chose
Pisciottana, an autochthonous variety from
Cilento, southern Italy, as the heart of the
Sabiá Quinhentos 2025/2026 blend. The project strengthens the brand’s emotional connection with Italian olive culture and terroir. It also broadens the sensory spectrum available to Brazilian consumers.
Tasting notes: tomato leaf, wild herbs and elegant artichoke
According to agronomist and mill master
Emanuel De Costa,
Pisciottana delivers intense aromas of
fresh tomato leaf and hints of
wild herbs. On the palate, the oil opens with an elegant
artichoke note, followed by gentle nuances of
lettuce, artichoke and
field herbs.
The tasting experience ends with a
soft, pleasant pungency, leaving a fresh and refined aftertaste. This profile makes the oil ideal for
pure tasting and for
finishing dishes that call for a characterful extra virgin olive oil.
Strategy to offer fresh oil between Brazilian harvests
The Brazilian harvest of
Azeite Sabiá sold out at the end of September. As in 2024, the company chose to produce an exclusive Italian oil to keep offering a
fresh, high-quality extra virgin until the next Brazilian crop, expected in
March 2026. Air freight plays a central role in this strategy.
By shortening the gap between
harvest, extraction, bottling and arrival in Brazil, Sabiá preserves
freshness,
aromatic compounds and
polyphenols, which are key to complexity and sensory longevity. Founder
Bob Vieira da Costa notes that only
15 days elapsed between harvest, extraction, bottling in Italy and air shipment to Brazil.
Once in the country, the batch spent
18 days at Guarulhos airport while Brazil’s
Ministry of Agriculture analyzed its documentation, after swift clearance from
Federal Revenue and
Anvisa. Only then could the oil reach the market. The timeline underscores both speed and regulatory care in the process.
