Four-course Christmas Eve dinner
The Christmas Eve dinner will be served on December 24 at 8 p.m. at Aatma restaurant. The four-course menu highlights seasonal ingredients and precise techniques.
The opening course features sourdough bread with romesco-style salsa, extra virgin olive oil, house butter and Middle Eastern eggplant. From there, guests move on to a sequence of vibrant starters.
Starters include an endive salad with blue cheese, caramelized walnuts and pear in orange emulsion, plus stracciatella with confit cherry tomatoes, wild arugula, charred orange, quinoa, cured ham and a Brazilian pepper vinaigrette.
The selection also brings baby romaine with shrimp, Sicilian lemon emulsion, parmesan and brioche croutons, and beef tataki with bone marrow vinaigrette, red onion, chives and crisp bread.
Main courses and desserts
Main courses include stuffed pasta with ricotta and shrimp in champagne sauce with fresh basil. There is also grilled fish of the day with purple sweet-potato purée, leeks, fennel and gribiche sauce.
Meat lovers can opt for a tenderloin tournedos with braised broccoli, truffle butter and almond rice. A charcoal-roasted vegetable medley with herb butter, crunchy nut farofa and truffled baroa purée rounds out the offer.
Desserts feature Pain Perdu Manuzita, a special French toast with milk ice cream and red berries, and orange cake with rosemary, grilled and served with toasted segments and yogurt ice cream. The classic Brazil nut mille-feuille with whipped dulce de leche and sour cream closes the menu.
The Christmas dinner costs R$450 + 10% per person, with 20% discount for hotel guests. Drinks are charged separately.
New Year’s Eve feast and live jazz
The New Year’s Eve dinner, on December 31, opens with an abundant antipasti table. The price is R$750 per person, with 10% off for guests; alcoholic beverages are not included.
The spread includes naturally leavened breads, charcuterie boards, a selection of Brazilian cheeses, fresh fruits, jams, honey and pistachio pesto. There are also babaganoush, butter-bean hommus with crispy pita and lemon zest, confit tomatoes with buffalo mozzarella, and Middle Eastern-style eggplant.
Other highlights are Moroccan couscous with shrimp, hearts of palm and almonds, smoked salmon with sour cream, and organic potato salad with red onion and arugula. Passed appetizers feature octopus salad, cod escabeche and beef tagliata with Dijon mustard.
Main dishes include roasted lamb with Arabic salad, mint-garlic yogurt, and bacalhau rice with heart-of-palm vinaigrette. Guests will also find shrimp and plantain curry with baroa mash, roasted flank steak with coconut-milk cheese pirão and charred broccoli, plus black lentils with smoked pork loin and citrus farofa.
The dessert table offers red-fruit cheesecake, chocolate and almond tart, strawberries with meringue, baked coconut dessert and Sicilian lemon pie. Both Christmas and New Year’s Eve feature live jazz performances.
Festive brunch on December 25 and January 1
On December 25 and January 1, celebrations continue with a festive brunch at Aatma from midday. The à la carte menu embraces seasonal flavors in a relaxed, bright atmosphere.
Breakfast remains available for guests and outside visitors, ensuring an extended, leisurely start to the day. Thus, the holiday mood goes beyond the evening celebrations.
